Is there a datasheet available for the load cell?

Soldered Support:
The load cells are generic components, so there isn’t a datasheet available. The Arduino library for the HX711 breakout is designed to work with them and handles linearization: GitHub - SolderedElectronics/Soldered-HX711-ADC-For-Weight-Scales-Arduino-Library · GitHub
You can try to find a datasheet by matching the load cell against its physical dimensions. There aren’t many types of generic load cells, so if you find one with matching dimensions, its datasheet should apply.
