Does the Inkplate 10 without a battery on the board come with a soldered 2-pin connector for the battery? Can I order the version without the battery and purchase a battery separately, then connect them?

The version without the battery comes with the 2-pin connector soldered on, so you can absolutely do what you described. Here’s some documentation on how to connect the battery: Inkplate Hardware Reference — Inkplate docs documentation - this covers the polarity of the battery as some JST connectors have flipped polarity.
Batteries available in the webstore are compatible with Inkplate. The Li-ion 3000mAh 3.7V battery is the one used for Inkplate 10 and fits perfectly in the enclosure.
