I’m looking for an Inkplate 10 with touch capability. I need to mirror a grid on the screen and be able to press a cell to input text from another device.

Unfortunately Inkplate doesn’t currently have a touch-enabled version at that size. The largest Inkplate with touch is the Inkplate 6FLICK: Inkplate 6FLICK - Interactive Touchscreen E-Paper Display – Soldered Electronics
One approach for an Inkplate 10 with touch would be to source a thin film resistive touchscreen peripheral and connect it to the board.
