I’m considering using Inkplate 2 as a monitoring device for internal apartment temperatures. Is anyone aware of Inkplate working with Home Assistant? I think an API similar to the one used in your weather station could work for this.

Inkplate has some support for ESPHome. Here is the official ESPHome documentation: Inkplate 5, 6, 10 and 6 Plus - ESPHome - Smart Home Made Simple
Inkplate 6, 10, and 6Plus are officially supported. Inkplate 2 is not officially supported yet, though there are feature requests: Issue · GitHub
I’m not sure when official Inkplate 2 ESPHome support will be released. If you can make normal GET requests to retrieve the temperatures, check the Inkplate2 → Advanced → WebWiFi → HTTP Request example to see how to fetch data and display it on the Inkplate.
