I found the download link for the software that I had missed initially on GitHub. I downloaded a copy from an instructables article as well. As a C hobby programmer, I’m not very experienced with GitHub, but I want to get the software to compile on my computer and then modify it.
I have a similar project in progress with Adafruit feather components using different sensors and without drawing weather information from the internet. I’ve been displaying local temperature, humidity, air pressure, time and date, and battery capacity. I like your display setup and would like to see if I could incorporate my sensors and modify your display software for them.

If you’re comfortable with C, you should find Arduino and Inkplate straightforward to use. Arduino makes it easy to compile for different boards by handling all the board software packages and libraries. There’s a quick guide here: Inkplate Get Started Page — Inkplate docs documentation
You can definitely incorporate Adafruit sensors with Inkplate and display all the sensor data on the e-paper display. We’ve done many similar projects ourselves.
