What is the accuracy difference between the normal load cells and the high precision load cells?

The key differences are in the precision and the dimensions.
From personal usage, the high precision load cell can reliably measure weight within a kilo or so range, especially if you in-software correct the linearity of the readings and do some manual calibration.
The low precision load cell will work fine and is actually pretty sensitive, but if you need to measure weight within a kilo, the high precision version is recommended. If you just want to detect pressure, the less expensive one will be perfectly adequate.
