Customer:
I’m an artist interested in your Inkplate e-ink displays. I’d like to play a series of very slow frame animations on the display with 1 minute pauses between frames, basically text appearing. Would that be possible?

Yes, it would be possible. You can do a full display refresh (which flickers the whole e-Paper display for a short while) or you can apply a partial update which looks seamless.
You can get started with Inkplate 6 using the Arduino library: Inkplate 6 - Quick start guide | Soldered Documentation
You can also use MicroPython, which may be more approachable to program for beginners. MicroPython documentation is available at GitHub - SolderedElectronics/Inkplate-micropython: MicroPython driver for Soldered Inkplate devices · GitHub
