I tried to use the U8g2_for_Adafruit_GFX library but since it needs the GFX library it conflicts with functions already included with the Inkplate GFX library and I can’t use U8g2_for_Adafruit_GFX.
Any ideas?

Inkplate supports only ASCII characters in the Adafruit GFX library. If you need UTF-8 support, you will have to implement this yourself. A possible workaround is to render the text required to display as a monochrome bitmap image and then display that image where the text should be. It works surprisingly well.
